Young beef fillet is perfect for preparing this dish. Cut the meat into small pieces and place it in a deep bowl. Slice the onion into half rings. Add the sliced onion to the meat, pour in vegetable oil, lemon juice, and add the prepared Ajika Seasoning-Sauce. Mix everything thoroughly and leave the meat to marinate for about 20–30 minutes.
While the meat is marinating, wash, dry, and dice the bell pepper, and finely chop the garlic. Peel the tomatoes and cut them into small cubes.
Place the meat and onions into a skillet. Set the skillet over medium heat and simmer the meat in its own juices under a closed lid for 30 minutes, stirring occasionally.
After the specified time, add the tomatoes and bell pepper to the meat and mix thoroughly. Cover the skillet with a lid and simmer over low heat for about 1–1.5 hours, stirring occasionally, and add tomato juice or pureed tomatoes.
Taste the meat for salt and add more if needed. Add the Khmeli-Suneli seasoning and garlic to the meat. Mix everything well and let it cook for a couple more minutes. Then add cilantro and parsley and mix again. Remove the skillet from heat and let the dish rest under a closed lid for a short while. Before serving the beef chashushuli, add Ground Allspice.
